Coconut Blueberry Chia Pudding

A delicious coconut and blueberry pudding which has been super boosted with the nutritional power of organic chia seeds. Chia seeds offer high quality plant protein, they are high in fibre, rich in calcium and magnesium and contain omega 3 & 6 essential fatty acids.


  • 2 tbsp Tree of Life Chia Seeds
  • 125ml organic coconut milk
  • 125ml organic almond milk
  • 2 tsp agave syrup or honey (don’t include if almond milk is sweetened)
  • 1/2 tsp organic vanilla paste or extract
  • 1/2 tsp cinnamon
  • 100g blueberries


  1. Whisk the coconut milk, agave syrup/honey and vanilla extract until smooth.
  2. Stir in the chia seeds and divide mixture into four small pots or glasses.
  3. Cover and refrigerate for at least 2 hours, or until it’s reached a thick pudding-like consistency. You can leave it in the fridge for up to 3 days.
  4. Remove from fridge, add fresh blueberries and sprinkle with cinnamon.
  5. Serve with a drizzle of honey if you’re feeling indulgent!
